Raw Food Pancakes – Yum!

How was pancake day for you? I was really looking forward to it, I don’t eat deserts or sweet things often but do like to experiment with raw food recipes on special occasions and pancake day is perfect for trying this fab raw food recipe from Ani Phyo.

 

I have to say Aini Phyo is one of my favorite raw food chefs, and these raw food pancakes are just delicious, for me they are light and just enough. I really hate it when I eat something sweet and after the second bite it feels heavy and just too much – not these – they are perfect, and hey they are raw food healthy! Raw Food Rocks!

 

 

Ani’s Raw Food Pancakes 

Delicious Raw Food Pancakes

 

2 cups of mashed banana’s

1 cup of Brazil nut’s  (grind to powder in your processor)

1 cup of  flax meal

2 teaspoons of ground cinnamon

about 1 cup of filtered water

 

Place the banana in the bottom of a high speed blender, add the rest of the dry ingredients and a little water, blend until smooth and spreadable consistency adding a little more water as you go if needed.

If you have a dehydrator,  use Paraflexx sheets or line 2 trays with wax paper, use a spoon or ladle and spread 1/2 cup per pancake (makes 6)

(divide between two trays)

Dehydrate for 5-7 hours, peel the pancakes off the sheets and dehydrate (without sheets for another 2-3 hours).

Dehydrating time for your raw food pancakes will depend on the thickness and consistency of your mix.

 

If you don’t have a dehydrator, you can use your oven, temperature low, if it is fan assisted great, and leave the door ajar, We are looking to dry (dehydrate) not cook. I have never done this with the pancakes so I cannot say how long it will take but probably a lot quicker than the dehydrator.

Raw Food Pancakes For Breakfast

 

These raw food pancakes of course don’t have to wait until pancake day, they make a great breakfast, your kids will love em!
