Pesto & Nut Raw Zucchini Nooddles!

Raw Zucchini Noodles
Serves 2
Ingredients
3 Cups of thin slices Of Zucchini (using a potato peeler or a spiral cutter)
I cup of chopped fresh tomato, or sundried (soaked)
250g raw nuts
1 cup of cold-pressed olive oil or coconut oil
basil, parsley and coriander to taste
Himalayan Salt
Freshly ground pepper
How To Make Your Zucchini Noodles….
Coat the Zucchini Noodles with a little oil, massage in and set aside to soften.
Wash your herbs (basil, coriander and parsley) and blend these up with the nuts and 1/2 teaspoon of oil. Add in the rest of the ingredients and blend until you get a creamy sauce. Toss gently with your Zucchini Noodles or just pour the mixture over the Zucchini Noodles.
Warm slightly in a saucepan to if you want to. Season with salt and and serve with fresh crisp salad!
